Tuna, Chicken
or Turkey Casserole
1 cup sliced celery
1 cup green pepper strips
1/2 cup chopped onion
4 tablespoons butter
1 can (10 1/2 ounces) condensed cream of
chicken or celery soup
1/2 soup can milk
2 cups cooked shell macaroni or other pasta
1 cup chopped tomato
1 can (9 1/2 ounces) tuna, drained and flaked
or
use 1 1/2 to 2 cups cooked chicken or turkey
1 1/2 cups oyster crackers
2 tablespoons melted butter
1/4 cup grated Parmesan cheese
In a saucepan, cook vegetables in butter until tender. Combine with soup, milk,
macaroni, tomato and tuna in 1-1/2-quart buttered baking dish. Bake at 350 °F. for 20
minutes. Meanwhile, combine crackers, melted butter and cheese; sprinkle around edge
of casserole. Bake 10 minutes until hot and bubbly.
Yield: 4 to 5 servings
